I hear you about the panniers- and I'm the same- I just cannot stand wearing a backpack now if I can avoid it. I'm loving the way your setup is looking too- so much more traditional than the Fargo....very nice indeed. Having the ability to ride on road and off road is a real bonus isn't it? I often take short cuts or the "extended" route on the Fargo just because "I" can" :D What racks are you looking at? I'd really like the Surly ones- but at $250 EACH......it is hard to cough up that kind of money.......but they are the best....! Got to love wet grass with a 35c touring tyre...lol.
